Mushroom Sugo Recipe

This recipe comes from Darrell Corti of the Sacramento gourmet grocery Corti Bros. The recipe is Darrell's grandmother's and appeared in Saveur in 2001.

This recipe is a testament to the adage that good things take time. Although the ingredients couldn't be more simple, the slow cooking at various stages deeply enhances the flavors. First "minced" onions are slowly cooked in olive oil until they begin to caramelize and turn a rich golden color. Then carrots are added, cooked for a while, then celery, and finally garlic and herbs. After the wine, tomato sauce, mushroom soaking water and mushrooms are added, the sauce still cooks for another hour and a half. The sauce is so good I just want to eat it straight with a spoon (and will if it's anywhere in reaching distance). It shines over polenta, ravioli, or a short pasta like penne or fusilli.

Here in the San Joaquin Valley, the eggplant season is in full swing. At our local farmers market last weekend one could find eggplants of every variety - globe, Japanese, striped, white, even eggplants that looked like tomatoes. I have a couple still on the vine, after picking the one used for this recipe that was just begging to be eaten. Here is a wonderful recipe for baba ghanouj (also spelled baba ghanoush) a middle eastern eggplant dip. It is typically served with pita bread.

Banana Foot Treatment



I don't know about you, but I get ugly, peeling skin and callouses on my heels. Especially this time of year when I'm barefoot more that shoed and I'm walking in dry dirt much of the day. I've tried all the foot creams and lotions but have never been satisfied with the results. My heels just stay ugly dry!

So, a couple of days ago I'm watching the Dr. Oz show on television, and the segment is about all natural cures for common ailments. One of the "cures" was pure banana for this same heel skin problem that I have. They described a simple, 4 step process; 1) With fine sandpaper, sand the affected areas, 2) rinse the foot, 3) apply crushed organic banana on affected areas, and 4) let banana dry for a few minutes and wipe clean.

While going through my morning routine this morning, I decided to add the banana foot treatment. Of course somehow I missed the first step of sanding the area on the heel. My feet and hands have been so dry that I got excited and just slathered on the crushed banana! When I was done with my heels, I spread it on the rest of feet. Why not try it I thought, since my toes and the bottoms of my feet seem dry too. I even put the rest of the banana on my hands...what's to lose?

Other than leaving the banana on for too long (20 minutes), it has made a difference with just the one application. By leaving it on too long, it became so dry that it was a little more work to rinse it off. But the end result is smoother, hydrated skin!

I imagine a good file with sandpaper grit found at any drug or grocery store, will accomplish the same thing and may be easier to use than the sandpaper sheets. And if you do this first it will probably work even better than my experience!

90 Percent of Corn Seeds Are Coated With Bayer's Bee-Decimating Pesticide


I'm doing something very odd this week: speaking at the annual conference of Croplife America, the main trade group for the US agrichemical industry. Croplife membersinclude MonsantoDowBayer, and Syngenta, all massive multinational companies I write about regularly and witheringly. I am astonished that Croplife wants to hear what I have to say—what I think of the group's member companies and their products is a matter of public record—and am curious to hear what they have to say to me.
As I prepared for the conference, a few interesting news items on the industry crossed my desk.
• As I've written before, Bayer's neonicotinoid pesticides, which now coat upwards of 90 percent of US corn seeds and seeds of increasing portions of other major crops like soy, have emerged as a likely trigger for colony collapse disorder. Watch this NBC News report from last week linking bee kills in Minnesota to Bayer's highly profitable product.
Meanwhile, the Columbus Dispatch reportssimilar bee die-offs in Ohio farm country, with beekeepers there, too, pointing the finger at Bayer.
• One of my biggest complaints about the agrichemical industry it its market dominance. As I say above, more than 90 percent of corn seeds planted today are treated with Bayer's pesticide. What if a farmer wants to opt out, to plant seeds free of neonicotinoids? Good luck. According to a Pesticide Action Network press release I received today, farmers in the midwest are complaining that it's virtually impossible to buy untreated seeds. In other words, farmers there have two choices: either pay up for Bayer's poison, or exit the corn-growing business.
• Speaking of market dominance, Monsanto essentially owns the market in genetically modified seed traits—a highly lucrative position, given the way GMOs have taken over massive crops like corn, soy, and cotton. And like any well-run company out to maximize earnings for its shareholders, Monsanto invests some of its profit hoard in protecting its market from pesky regulators who might place the public interest over Monsanto's. From theCenter for Responsive Politics, which tracks money in politics:
According to OpenSecrets.org data, in the first three months of this year, Monsanto spent $1.4 million lobbying Washington—and spent about $6.3 million total last year, more than any other agribusiness firm except the tobacco company Altria.
Last year's investment seemed to pay off for the company. Even as Monsanto's Roundup Ready technology faltered under a blitz of resistant "superweeds," the USDA unconditionally approved Roundup Ready alfalfa, after hinting strongly it would place limitations on the crop. The USDA also approved Roundup Ready sugar beets, defying a court order that it delay approval pending an environmental review.
When a company dominates markets and can buy lobbying power in Washington, its products don't actually have to work, I suppose.

A recent presentation at the Institute of Food Technologists’ Wellness meeting showed that eating a low-glycemic breakfast can prevent blood sugar spikes and crashes. It might even help you put the brakes on your late-morning Krispy Kreme detour.
The glycemic index ranks how much a particular food raises your blood sugar levels. Your body rapidly absorbs high-glycemic foods like pastries, white bread and processed foods, which spike and crash your blood sugar,  leaving you hungry and tired. High-glycemic foods also raise your insulin levels. Elevated insulin levels contribute to diabetes, heart disease and aging. Insulin is also a powerful storage hormone, and it stores one thing really well: fat. Low-glycemic foods, on the other hand, create a steadier rise in blood sugar and insulin levels. A 2011 Nutrition and Metabolism study that researchers presented at the Institute of Food Technologists’ meeting showed that people who ate low-glycemic whole almonds at breakfast felt full longer and had steadier blood sugar levels compared to people who ate a high-glycemic breakfast like a Pop Tart with orange juice. As an added bonus, researchers also found that eating a low-glycemic breakfast like an omelet or a protein smoothie means you eat less food the rest of the day.

Mmmm, Good Breakfast Juice

I discovered this juice recipe recently while learning how to eat a raw, organic diet. (I'll get back to the raw diet in an upcoming blog!) Its fresh juice that I found very refreshing. The portions are for 1 serving. Enjoy, and drink to your good health!

  • 1 small beet
  • 5 carrots
  • 1 apple
  • 1/4 Cup mint sprigs, (or cilantro or basil)
Process all ingredients through a juice extractor. Stir and serve immediately.
